
Puran Poli – Puranachi Poli
Puran Poli is ancient Indian Maharashtrian sweet recipe. It is sweet flattened bread made up with gehu atta (wheat flour) , Maida and stuffing is made up of chana daal (Bengal gram) and Gud (Jiggery) or sugar. This dish is just not a sweet dish, it represents our Indian culture. Generally this dish is prepared on Indian festivals especially to offer Bhog to the God . Festivals like Gudhi Padava, Navratri, Ganesh Chaturthi, Dussehra, Holi are celebrated with Puran Poli. It is also served during weddings and other celebrations.

1. Food History-
The origins of Puran Poli can be traced back to the centuries having historical roots spread deep in Indian culture. References has been found in the ancient texts which shows that Puran Poli is part of our culture since thousands of years.
Some interesting facts-
The dish was then popularized by the Maratha community and soon became a favourite sweet dish across India.
In Maharashtra it is know as Puran Poli, in Gujrat as Vedami, in Karnataka as Holige ,in Tamil Nadu as Bobbatlu and the list is endless.
2. Tips and Tricks
Making puran or the sweet stuffing is the tricky part.
Once the daal is taken out of the cooker, drain it completely and on low flame
3.Recipe for Puran Poli
A) How to make Puran
Take 250 gm of Chana dal. Wash it well and soak it overnight or minimum for 6 hours.
Put the soaked dal along with the water in to the pressure cooker.
Add 3 cup water , ½ teaspoon haldi or turmeric.
Pressure cook for 20/25 minutes on low flame up to 4 to 5 whistles.
Let the cooker release all the pressure.
Drain all the water and transfer dal to a large pan.
Mash dal with the masher.
Add 250 gm jaggery in to dal and cook it for 10 minutes over low flame.
Stir the batter continuously while cooking.
When dal batter gets converted in to dough consistency, it is the sign that puran is cooked well.
Add Cardamom powder and nutmeg powder at this stage. Puran is ready.
Let it cool down completely.
Make small balls of Puran.
B) How to make Poli
Take 300 gm of wheat flour and 50 gm of Maida (all-purpose flour), ¼ teaspoon of turmeric, ¼ teaspoon of salt, 2tablespoon of oil.
Add some water as required and knead the dough.
Dough should be soft in texture.
Cover the dough with a cotton cloth and rest it for 2 hours.
At this stage dough is ready and you can start making poli with the same.
Make small ball of the dough slightly bigger than the puran ball.
With your fingers flattened the dough initially and make a cup like shape of the dough.
Place the puran ball in the cup shaped daugh, start to cover the puran ball with the dough.
Seal the dough without any cracks on the surface.
Roll the ball with rolling pin very lightly and carefully.
Roast the poli from both the sides on a big tava on medium heat.
Use generous amount of ghee on both the sides of the poli.
Serve hot Puran Poli with ghee and milk.

1 table spoon of haldi
Salt to taste

Nutmeg Powder
